Sweet potato gnocchi

  • 350 gr sweet potatoes
  • 1 egg yolk
  • 250 gr spelled flour (and extra for the work surface)
  • pepper and salt


  1. Peel the sweet potato and cook it for about 10 minutes. Mash to a puree and let cool well, for example in the refrigerator.
  2. When the puree has cooled down, add the egg yolk, salt and pepper and the spelled flour in parts. You may need more or less flour. Knead into a smooth dough. The dough is ready when it is no longer sticky.
  3. Sprinkle flour over the work surface and make small balls of the dough. Gently push the balls down with a fork.
  4. Bring a pan of water to the boil and cook the gnocchi per 6 to 8 pieces in a few minutes. The gnocchi is done when it floats to the top.
