Sweet potato lasagna

  • 350 gr sweet potato (sliced)
  • 800 ml tomato cubes
  • 1 zucchini (in ribbons)
  • 2 balls of mozzarella
  • 1 onion
  • 225 gr spinach (frozen)
  • 1 egg
  • 1 garlic clove
  • 1 teaspoon Italian seasoning
  • handful of grated cheese


  1. Preheat the oven to 200 degrees. Finely chop the onion and garlic and fry in a pan. Add the tomato cubes and the Italian herbs. Season the tomato sauce with salt and pepper. Let the mixture simmer for about 20 minutes.
  2. Mix the spinach with the egg and some salt and pepper. Make layers in a greased baking dish of the zucchini ribbons, tomato sauce, mozzarella, sweet potato and put 1 layer of spinach in between. Finish with tomato sauce and mozzarella. Divide some cheese over this and then put the sweet potato lasagna in the oven for about 35 minutes. If necessary, turn on the grill for a few minutes.

Tip: Quite a lot of moisture comes out of this casserole. If you want to limit this, you can grill zucchini and sweet potato in advance and drain well.
