Sweet potato tacos

  • 12 tacos
  • 400 gr sweet potato
  • 2 tablespoons of olive oil
  • Pinch cumin
  • pinch of paprika powder
  • 1 small can of corn
  • 200 g minced meat
  • 100 ml tomato sauce
  • pepper and salt
  • 100 gr cherry tomatoes
  • 1 avocado
  • Handful of cheese
  • 1 lime
  • 125 ml sour cream
  • Optional: fresh cilantro
  • Optional: feta cheese
  • Oven dish


  1. Heat the oven to 200 degrees. Cut the sweet potato into small cubes and mix with the olive oil, cumin, paprika, pepper and salt. Then divide over a baking tray with baking paper and put in the oven for 15 minutes. Meanwhile, add the minced meat to the pan. Add the corn and the tomato sauce. Season with salt and pepper. Cut the tomatoes and avocado into cubes. Remove the sweet potato from the oven and also bake the tacos.
  2. Fill the tacos with sweet potato, minced meat mixture and tomatoes. Place them topside up in a baking dish and sprinkle with cheese. Place in the oven for another 3 minutes until the cheese has melted slightly. Mix the sour cream with the lime juice. Garnish the tacos with the pieces of avocado and the sour cream or feta cheese.
