Mexican minced meat casserole with sweet patato

Ingredients
- 1 tablespoon Cajun seasoning
- 200 grams Lean minced beef
- 1 can (150 grams) Kidney beans
- 450 grams sweet potato
- Coriander
Preparation
- Drain the kidney beans well in a colander or sieve.
- Fry the minced meat in a frying pan and add the cajun spices. Stir this well.
- Cut the sweet potato into small wedges or cubes.
- Take an oven dish. First place the sweet potato at the bottom of the dish. Then add the kidney beans and finally spread the minced meat over it.
- Place the oven dish in a preheated oven of +/- 220 degrees for 15-20 minutes.
- Finally, cut the coriander into small pieces and sprinkle it over the casserole.
