Mexican minced meat casserole with sweet patato

  • 1 tablespoon Cajun seasoning
  • 200 grams Lean minced beef
  • 1 can (150 grams) Kidney beans
  • 450 grams sweet potato
  • Coriander


  1. Drain the kidney beans well in a colander or sieve.
  2. Fry the minced meat in a frying pan and add the cajun spices. Stir this well.
  3. Cut the sweet potato into small wedges or cubes.
  4. Take an oven dish. First place the sweet potato at the bottom of the dish. Then add the kidney beans and finally spread the minced meat over it.
  5. Place the oven dish in a preheated oven of +/- 220 degrees for 15-20 minutes.
  6. Finally, cut the coriander into small pieces and sprinkle it over the casserole.
